Swamp Rabbit Cafe and Grocery (SRCG) is a grocery, bakery, and cafe that opened in 2011 with the mission to bring local food from farmer to consumer. We buy from over 200 small family farms and artisan food makers. We care about doing things right – from ingredients to being an active part in the community.  We are seeking an experienced butcher to help us open a whole animal butchery, the first of its kind in Upstate South Carolina, that sells only local meat. Our butchery will offer grass-fed and grass-finished beef, pasture-raised meats, artisanal charcuterie, and more from our existing family of 20 local meat farms and more. It is also our goal to introduce our customers to some of the less familiar parts of animals with the idea that a chicken is more than just a breast, and pork is more than just chops. We are committed to sustainability and whole animal utilization from local and regional family farms that do not use added antibiotics, hormones, and steroids on their animals.

We have been rapidly growing since we opened five years ago and are looking for a positive, good humored person who is passionate about local, fresh food and small community business. The Butcher is responsible for delivering the Swamp experience and a great product to all guests. We expect that this will be a very challenging yet fulfilling job. 

Daily responsibilities include:

  • Managing the daily operations of the butchery, including but not limited to staffing, displays, retail product management including chartcuterie, and farmer and customer relations
  • Breaking beef, pig, lamb to sub primals
  • Cleaning muscles for retail sales
  • Setting up meat case and display
  • Organizing and keeping the walk-ins clean
  • Help filling customer orders
  • Assisting and educating customers with instructions in cooking and purchasing products
  • Efficiently utilizing whole animal through selling retail and working closely with the Kitchen and Prepared Foods staff to utilize whole animal

Required experience:

  • Whole Animal Butchering, Food Retail Customer Service in small business environment: 1 year
  • Management experience a plus

Expectations

  • Creates, implements​ ​and​ ​refines​ ​all​ ​Swamp​ Meat ​procedures​ and​ ​processes
  • Provides the highest quality meat cuts and recipes ​under​ pressure with high presentation
  • Manages and trains butchery staff; ensures efficient processing and utilization of product
  • Effectively​ ​communicates​ ​and​ ​works​ ​with​ ​all​ ​staff​ ​at​ ​SRCG
  • Maintains​ ​positive​ ​and​ ​consistent​ ​energy​ ​and​ ​productivity​ ​standards
  • Has​ ​knowledge​ ​of​ ​food​ ​safety​ ​and​ ​sanitation​ ​practices​ ​(ServSafe certification​ ​a​ ​plus).​ ​​Stores​ ​products​ ​with​ ​attention​ ​to​ ​handling,​ ​shelf life​ ​and​ ​rotation  
  • Oversees​ ​quality​ ​control​ ​

Compensation

  • $38k per year or based on experience
  • Wage​ ​increase​ ​available​ ​if​ ​exceeding​ ​requirements
